Classic Western Cape Peach Jam (Traditional High-Sugar Style)

Yield: 5–6 jars | Processing: 10 minutes water-bath

Ingredients

  • 1.8 kg ripe Western Cape peaches (peeled, pitted, chopped)

  • 1.2 kg granulated sugar

  • 60 ml fresh lemon juice

  • 1 vanilla pod (optional)

Method

  1. Combine peaches, sugar and lemon juice. Macerate 1–2 hours.

  2. Bring to a rolling boil, skim foam, and cook until it reaches 105 °C (221 °F) or passes the wrinkle test (15–25 min).

  3. Ladle into hot Sexy Slim Boer jars, leave ¼ inch headspace, wipe rims with vinegar, apply lids.

  4. Process 10 min in boiling water bath. Cool undisturbed 24 hrs and test seals.

Perfect on morning toast or with cheese.
